what is the different between salt water and fresh water shrimp?

taste, texture, availability, cost, etc.
are most shrimps farmed? both fresh and salt water?
where are most of them come from?

I am a former chef and have used many of both kind, as for your first question, there is a taste and texture different, not a ot, availability is the same, cost fresh are generally a slight bit cheaper and I bought cases.

Shrimp are now being farmed like salmon and trouts, in some Asian country’s, I worked in Singapore and Japan and travelled to Thailand and Hong Kong and you have to go to a fresh fish market to see the hundreds of different ones, not seen in the west or Europe.

Most are from around India, Thailand, Bangaledesh, Vietnam and southeast asia, the gulf ones from Lousianna and Mexico are generally called white shrimp as they are lighter in colour, my favorites were always the the Black Tigers from Thailand or Vietnam, I like the larger 15/20 size as they are just a better flavour.

Small cold water shrimp from the north atlantic like we have here in Canada are nice for salads, and are popular in Europe were they call them prawns.
